We’re looking for a hands-on chef who thrives in a fast-paced environment, brings strong commercial awareness, and understands that success in the kitchen isn’t just about great food — it’s about smart management too.
What You’ll Be Doing
* Running day-to-day kitchen operations: managing prep schedules, rotas, and team performance.
* Supporting the Head Chef in driving standards, consistency, and team morale.
* Playing a key role in menu planning and dish development — keeping things seasonal, fresh, and profitable.
* Managing kitchen financials: controlling GP, monitoring budgets, reducing waste, and forecasting labour.
* Negotiating with suppliers to get the best ingredients at the best value.
* Maintaining full compliance with food hygiene and health & safety standards.
* Training, mentoring, and developing junior chefs.
* Taking charge during busy service — especially on weekends.
What We’re Looking For
* Previous experience as a Senior Sous Chef or strong Sous Chef in a fresh-food, high-volume kitchen.
* Confident with the financial side of kitchen management — dish costing, rota planning, stock control, and forecasting.
* A natural leader who motivates and leads by example.
* A passion for honest, high-quality cooking using fresh, local produce.
* Flexible and calm under pressure, especially during peak service.
