Were looking for a passionate and experienced Bar Manager to take the reins at EVE our lively Italian restaurant and bar. Youll bring a mix of operational know-how, creative flair, and a genuine passion for hospitality to lead a talented team and deliver a best-in-class guest experience.
From aperitivo hour to late-night celebrations, no two shifts are the same. Youll be the driving force behind a bar known for its energy, quality, and standout service.
The Details:
What exactly you will be doing
Lead, inspire, and support your team to deliver exceptional service every time
Oversee day-to-day bar operations, including stock control, staffing, and profitability
Curate and evolve our drinks menus, championing Italian-inspired cocktails and seasonal specials
Build strong relationships with suppliers and internal teams
Work collaboratively with the floor team and kitchen during busy shifts
Participate in restaurant events and special functions as needed
Follow all health, safety, and hygiene protocols, including responsible alcohol service
Maintain high standards of hygiene, safety, and responsible service
Ensure consistency in product quality, presentation, and guest satisfaction
Lead by example hands-on, approachable, and always focused on the guest

What qualities are we looking for?
Previous experience as a Bar Manager or senior bar professional in a busy hospitality venue
Strong cocktail and wine knowledge, ideally with an appreciation for Italian flavours and service style
Excellent leadership and communication skills with a collaborative mindset
Financial awareness and confidence in managing budgets and targets
Positive, professional, and calm under pressure
Passionate about people your team and your guests
Must-haves:
Current, legal and unrestricted ability to work in the United Kingdom
Ability to work on-site at Virgin Hotels Edinburgh for every shift.
Flexibility to work different shifts, including on the weekends and holidays.
