The Orangery Tottenham Court Road is seeking a passionate and skilled Executive Sous Chef to join our innovative farm-to-table restaurant in London. As a key member of our culinary leadership team, you will work directly with our Executive Chef to bring our Modern British cuisine to life, showcasing the freshest ingredients from our underground vertical farm that cultivates 35,000 plants.

At The Orangery TCR, we believe in sustainability, innovation, and creating extraordinary dining experiences that connect guests with their food's origins. Our Executive Sous Chef will embody these values while delivering exceptional culinary creations.

Key Responsibilities: Collaborate with the Executive Chef to develop seasonal menus that highlight our daily farm harvests and locally sourced ingredients
Lead kitchen operations in the Executive Chef's absence, overseeing all culinary stations including our Chef's Table experience
Train, mentor, and supervise kitchen staff, fostering a culture of excellence, creativity, and sustainability
Ensure consistent food quality and presentation across all dining areas including the main restaurant and lounge
Work closely with our farm team to understand harvest schedules and incorporate fresh produce into daily specials
Maintain food cost controls, inventory management, and adherence to health and safety standards
Participate in menu planning, recipe development, and special events that showcase our farm-to-table philosophy
Engage with guests during Chef's Table experiences, sharing the story behind our sustainable practices and culinary approach

Qualifications: Minimum of 3 years of experience in a senior culinary role, preferably in a fine dining or farm-to-table establishment
Formal culinary training with a deep understanding of Modern British cuisine and seasonal cooking
Proven leadership abilities with experience managing kitchen teams and operations
Passion for sustainable practices and locally sourced ingredients
Creative approach to menu development with strong attention to detail
Excellent organizational skills and ability to work under pressure
Knowledge of food safety regulations and HACCP principles
Willingness to learn about vertical farming and sustainable food systems
