Experienced Chef de Partie and Sous Chefs are sought for a collection of independent boutique hotels and luxury remote properties across some of Scotlands most stunning locations. These are excellent opportunities for chefs looking to work with fresh, seasonal produce in high-quality kitchens while enjoying the lifestyle that comes with live-in roles in beautiful rural settings.
Successful candidates will be joining professional, close-knit brigades focused on delivering consistently high standards across refined restaurant service, tasting menus, and relaxed all-day dining depending on the property.
Chef de Partie responsibilities:
Running and managing an allocated section during service
Preparing high-quality dishes using fresh, seasonal ingredients
Supporting junior chefs and maintaining kitchen standards
Assisting with stock control and minimising waste
Ensuring food hygiene and health & safety standards are upheld at all times
Sous Chef responsibilities:
Supporting the Head Chef with day-to-day kitchen management
Leading service and supervising the brigade in the Head Chefs absence
Assisting with menu development and seasonal dish creation
Training and mentoring junior team members
Managing stock, ordering, GP targets and kitchen organisation
