Bristol Lido has a fantastic opportunity to join our well-established Kitchen team We are looking to fill a full time Senior Chef de Partie position.
Our Restaurant Ethos:
The menus for both the poolside bar and the restaurant are based around our Italian wood oven and bespoke charcoal grill and have Mediterranean and North African influences, with nods to the Levant for its exoticness and California for its seasonality, presented simply without fuss or complication, letting the ingredients speak for themselves.
We do not compromise on ingredients using the best the southwest has to offer, from day boat fish and shellfish from Cornwall, Dorset, and Devon. Meat and fowl are selected from farms who specialize in rare breeds and farm with regenerative, organic practices, we purchase whole carcasses when possible and butcher in-house to eliminate waste and to keep our belief of using every part. Wild game and venison when in season come from well-managed shoots and land managers respectively.
Our fruit and vegetables are grown locally when the farms and seasons permit, otherwise carefully sourced from Spain, Italy, and France. Dairy comes in churns from local creameries and cheeses are sourced from small artisanal producers.
We are looking for someone who is hungry to learn about in-house butchery and bakery, working in a fast paced busy environment with wood-fired ovens and charcoal grills. a real way of cooking. A great environment to learn and develop.
This job is a great opportunity for someone looking for upwards of a 1-year commitment to learn, train and develop.
Who are we?
Bristol Lido is an outdoor swimming pool surrounded by a restaurant, poolside bar and spa. The idea is for guests to sit back, enjoy being served by friendly staff whilst watching the swimmers alongside and your food being prepared in the Wood (now Gas fuel to support the survival of the environment) fired oven. Our Spa provides a holistic approach to tailored massages, using bespoke Lido oils, guests can relax while hearing the lapping of the water on the pool's edge.
