Role Overview:
This position involves significant responsibilities across various aspects of restaurant management and culinary excellence. The core focus is maintaining the group's culinary identity on trend within the outlets, fostering a family feel among staff, ensuring operational efficiency, and upholding health and safety standards.
Key Responsibilities:
1. People: Create a family atmosphere in each restaurant, promote good relations and communication among BOH teams, participate in recruitment, training, and mentoring of chefs.
2. Financial: Control stock, ensure product availability, follow stock procedures, meet GP targets, prepare staffing rotas timely, source products efficiently, and manage waste to meet GP goals.
3. Service: Spend significant time in kitchens, support team training, ensure presence during peak times, oversee menu changes, and ensure staff are well-prepared for new offerings.
4. Health and Safety: Uphold high standards of health, safety, and hygiene, support audits, and rectify issues promptly.
About You:
* Minimum 5 years as Head/Exec Chef in quality restaurant/hotel environment, with at least 2 years in a leadership role.
* Experience with cooking over fire, especially meat, fish, seafood, and vegetables, and being trend-aware and creative.
* Strong leadership, communication, and organizational skills, with a passion for food and excellent food knowledge.
* Ability to work in a fast-paced environment, problem-solve, and lead by example.
* Computer literacy in MS Office.
KPIs: Achievement of Food and Labour GP, passing Food Alert Audit (85%), EHO 5-star rating, H&S targets, and maintaining high review scores.
Salary & Benefits: £80,000 - £100,000 plus 20% bonus, supporting a growing innovative company, with a start date around July/August, launching in September. Candidates must have the right to work in the UK.
