The Head Chef is responsible for leading the kitchen team, delivering high-quality dishes, and maintaining the reputation of The Old Mill as a destination for excellent food. This role combines creativity, leadership, and operational control to ensure a consistently outstanding dining experience
.Key Responsibilities: Kitchen Leadership & Management Lead, train, and inspire the kitchen brigade
Manage staffing levels, rotas, and recruitment
Maintain a positive, professional kitchen culture
Menu developments aligned with The Old Mills style and clientele
Incorporate fresh, locally sourced Scottish ingredients
Monitor portion control and minimise waste
Oversee kitchen operations during service
Ensure compliance with UK food safety and hygiene regulations (HACCP)
Maintain cleanliness and organisation of all kitchen areas
Stock & Cost Control- managing ordering, stock rotation, and supplier relationships
Control food costs and work within budget targets
Accommodate dietary requirements and allergens
Collaborate with front-of-house to ensure smooth service
Skills & Experience Required: Proven experience as a Head Chef or Senior Sous chef
Strong leadership and team management skills
Creativity and passion for modern Scottish cuisine
Knowledge of food safety regulations in Scotland
Financial awareness (GP margins, cost control)
Ability to work under pressure in a busy kitchen
Strong knowledge of local Scottish produce
Hands-on, proactive approach
Full-time role including evenings, weekends, and holidays
