Job Description
An exceptional opportunity presents itself for a Commis Chef to join the Food & Beverage Department at Raffles London at the OWO.
Reporting to the Executive Chef, you will assist Sous Chefs and Chef de Parties in food preparation and service, ensuring high standards are maintained and kitchen areas, equipment, and utensils are kept clean and tidy according to hotel standards.
Specifically, as the Commis Chef, your responsibilities will include:
1. Following methods and recipes as outlined in communication.
2. Being environmentally conscious and working towards low waste operations.
3. Maintaining and operating your section efficiently.
4. Correct storage and labeling of foodstuffs, equipment, and dry goods.
5. Proper stock rotation and ordering of food and supplies via correct channels.
6. Checking and ordering equipment as needed.
7. Contributing to cost management and waste reduction.
8. Managing fair rotas to meet guest and business needs.
9. Attending monthly communication meetings and nightly briefings with the sous chef.
10. Providing regular performance feedback to colleagues.
11. Participating in projects to improve kitchen operations.
12. Ensuring proper storage and labeling in all kitchen areas.
13. Maintaining equipment via proper channels.
14. Performing additional duties in absence of line managers or senior staff.
15. Assisting in other departments or restaurants as needed.
16. Explaining services to guests, visitors, and staff.
17. Fostering effective working relationships with colleagues and management.
18. Helping new colleagues adapt to the workplace and standards.
19. Assisting in departmental quality checks.

2. Excellent communication and customer service skills.
3. Willingness to contribute to a 24-hour operational schedule.
4. Previous experience as a Demi CDP or high-performing Commis.
5. A creative approach to producing high-quality food.
