Main Duties and Areas of Accountability lock in and out on Rota Cloud as per schedule. To ensure the Bar is ready for service with the correct mise en place. Ensure mise en place is always prepared for the next service. To produce and/or serve all drinks from Drinks Menu, Wine List, Cake Counter. To produce all required garnishes for drinks, cocktail mix…etc To always follow drink recipes and drink Sop’s and maintain consistency whilst delivering the highest standard of beverages. Be able to work in both the Bar & Restaurant (Breakfast service, lunch service, afternoon tea service & dinner service). Take orders in the Bar and Restaurant for breakfast, lunch, afternoon tea, dinner and drinks. Use the tablet provided for taking orders and record orders according to SOP’s. Ensure that all food & drink orders are processed correctly and be responsible for processing all restaurant/bar bills. Verify the age of customers to ensure legal drinking age requirements are met. Ensure the ‘Cake Counter’ is always stocked up, clean, first in first out system to be followed, appropriate communication with Head Chef/Sous Chef to refill/order new stock. Ensure that drink wastage is always recorded as per company policy. Take payment, post payments accordingly, and charge guests' bills to their room account. Ensure guests sign their bills when charging to their room account. Reconcile the till at the end of the day and ensure it balances. If any discrepancy, it is your responsibility to investigate and resolve. Assist management in implementing and following established procedures. Assist Bar & Restaurant sales by inviting guests to eat within the hotel, upselling, drinks, desserts, after-dinner drinks, etc. Liaise with the Restaurant Manager /Assistant Restaurant Manager/ Supervisors during service for the allocation of tables and seating of guests. Ensure correct table allocation for guests in the bar and restaurant. Ensure that the quality of beverages, food and service consistently meets and exceeds brand standard by strictly adhering to SOP’s at all times. Maintain exceptional knowledge of our food and beverages offerings at all times. Respond to all customers & colleagues in a polite and helpful manner, offering assistance when necessary. Inform your Manager when stock items are running low to place an order, to avoid items being off sales. Participate in daily line checks if required to. Communicate with the Restaurant Manager /Assistant Restaurant Manager/ Supervisors throughout service on covers, seating, and availability of items, etc. Be fully knowledgeable about Food Allergens Procedures.
