Poole, England. Poole is a bustling tourist resort in the east of Dorset with award winning blue flag beaches and a beautiful historic old town. The hotel opened 2008 and offers 38 bedrooms, a 90-seat bistro & bar, and 3 private event spaces.

We offer on the job training in house as well as working with our training provider to offer nationally recognised apprenticeships. If you want to progress your career a HDV kitchen is the place to do it. Four of our Head Chefs have been promoted from within with two starting their journey as kitchen porters.

Working as Sous Chef in the kitchen you will support the Head Chef by ensuring the team deliver the brand standards in a smooth and consistent manner. Ideally you will have worked at this level before and be able to demonstrate your skills when developing the team beneath you. We create memories that our guests never forget. This could be the next step for you into a Head Chef role – we actively encourage internal development and progression.


Responsibilities

* Support the Head Chef in delivering brand standards and kitchen operations.
* Lead and develop the kitchen team to achieve high standards of food quality, service and health & safety.
* Plan menus, manage stock and control costs while maintaining guest satisfaction.
* Train and mentor junior kitchen staff and promote their development.
* Work collaboratively with other departments to ensure seamless service for guests.


Qualifications

Relevant culinary experience and leadership within a kitchen is preferred. Knowledge of HACCP and food safety practices.
