WHAT WE ARE LOOKING FOR
We are on the hunt for a dynamic, organised and highly creative individual to head up kitchen operations and lead our experienced team in our flagship restaurant in Lyme Regis, to deliver a small but exciting breakfast/lunch and dinner menu.
Working alongside the executive chef, you will help install an already proven menu and train a team to deliver it in a timely professional manner.
Reporting to the site GM & executive chef, you will oversee the day-to-day operations & maintain a fresh, no nonsense and professional working environment. Your main responsibilities are….
·Employ, train, and ensure there is a competent team in play at any given time.
·Develop your team to be the best they can be rewarding good performance.
·Be consistent with all H&S, HR & food safety paperwork.
·Create a joyful & fruitful working environment – making sure the connection between FOH & BOH is strong with a one team mentality.
·Promote teamwork and quality service through daily communication & leading by example.
·Be creative with specials to help minimise wastage.
·To ensure that all equipment is maintained, cleaned and hygienic.
·Ensure that product is consistent and to a good standard.
·Complete forecasts, plans & costings.
