The successful candidate will have experience or a good understanding of butchery at a primary and retail level.
Responsibilities
* Check quality of primals and steaks against specifications
* Train and monitor the relevant people on:
o How to carry out checks against specifications
o Rectify/reject primals/steaks/joints
o Segregate potential claims/rejections
* Verify the claims/rejections making sure that:
o Claim/rejection is correct against specification
o Weights claimed/rejected are matching Hellenic weights
o Gather photographic evidence against the above
o To review all the claims/rejections prior to sending to the supplier
* Check and challenge the trim, off cuts and overs generated at each production run.
o Investigate why generated, establish RC and corrective actions in order to prevent repeat mistakes.
* Work with production Operational managers to analyse yields that do not meet target:
o Carry out RC and implement corrective actions
Qualifications
* Previous experience in butchery and/or butchery management
* Good understanding of cutting from carcass
* Strong attention to detail and manual dexterity
* Ability to work in a cold environment and stand for extended periods
* Commitment to health and safety standards
