We are looking for an ambitious Assistant Restaurant Manager to join the leadership team at 1 Lombard Street, one of London’s most iconic independent restaurants. With over 120 weekly covers and a weekly turnover exceeding £120,000, this is a rare opportunity to be part of a dynamic operation at the heart of the Square Mile.
As Assistant Restaurant Manager, you’ll play a pivotal role in driving service excellence, developing our people, and delivering outstanding results—all while helping shape the future of a restaurant that prides itself on seasonality, artisan produce, and exceptional hospitality at mid-market prices.
What you’ll be responsible for:
Operations & Financial Management
* Oversee Front of House operations during service, ensuring seamless guest experiences.
* Manage bar operations including ordering, stock control, cost management, and developing our bar offering.
* Maximise revenue opportunities across people, place, product, and promotions while maintaining integrity and standards.
* Deliver accurate end-of-shift reports, rota management, and daily sales tracking.
* Monitor guest and team feedback to continuously improve service and product delivery.
People, Learning & Development
* Lead, motivate, and inspire the Front of House team to deliver at the highest level.
* Provide structured training and tastings to build strong product knowledge.
* Conduct appraisals, mentor progression, and celebrate team achievements.
* Support recruitment and onboarding of new team members.
* Drive a positive workplace culture rooted in professionalism, growth, and collaboration.
Health, Safety & Compliance
* Ensure strict adherence to health, safety, and company policies.
* Lead daily opening/closing checks and contribute to in-house audits.
* Train and monitor the team on fire, emergency, and security procedures.
* Maintain the highest levels of safety and wellbeing for guests and staff.

* Proven experience in a management or supervisory role within a high-volume restaurant.
* A natural leader with strong communication skills and a hands-on approach.
* Passion for hospitality, food, and drink, with an eye for detail.
* Organised, financially astute, and confident in operational management.
