At The Welsh House by Wynne, we're committed to showcasing the rich heritage of Welsh cuisine while infusing it with modern flair. As part of a well-established Welsh Independent Group with sites across Wales, we're looking for a talented Head Chef to lead our kitchen team and uphold our tradition of excellence.
The Role:
As our Head Chef, you'll be at the helm of our kitchen, orchestrating the creation of dishes that exemplify Welsh culinary heritage with a modern twist. Reporting to the General Manager, you'll lead a team of talented chefs to deliver exceptional dining experiences. Your responsibilities will include:
* Creating and executing specials for the specials board and following specs that celebrate Welsh cuisine, always using locally sourced ingredients to deliver dishes of the highest quality.
* Leading and inspiring a team of chefs, fostering a culture of creativity, excellence, and collaboration.
* Overseeing kitchen operations, including food preparation, cooking, and plating, to ensure consistency and adherence to quality standards.
* Managing inventory and food costing to optimise profitability while minimising waste.
* Training and developing kitchen staff, nurturing their skills and talents to achieve their full potential.
* Maintaining kitchen hygiene and safety standards in compliance with regulations.
* Collaborating with suppliers to source the best quality ingredients and negotiate favourable terms.
* Working closely with Wynne Evans and other stakeholders to develop seasonal menus and special event offerings.
* Monitoring and controlling kitchen budgets and expenses to meet financial targets.
* Ensuring smooth communication and coordination between kitchen and front-of-house staff to deliver seamless service.
* Upholding the reputation of our establishment by consistently delivering exceptional food and service.
* Contributing to the development of our culinary identity and staying abreast of industry trends.
Preferred Qualifications:
While not mandatory, the following would be advantageous:
* Proficiency in Welsh cuisine
* Previous experience as a Head Chef or Sous Chef in a high-volume restaurant environment.
* Culinary qualifications or equivalent experience in a professional kitchen.
* Creative flair and a passion for experimenting with ingredients and flavours.
* Strong leadership and communication skills, with the ability to motivate and inspire a team.
* Knowledge of food safety and hygiene regulations.
* Ability to work well under pressure in a fast-paced environment.
