Responsibilities of the Director of Food and Beverage:
1. Take ownership and oversee the management of all Food and Beverage Departments. This includes all Restaurants and Bars, Room Service and Conference and Banqueting.
2. Focus on teamwork and flexibility in creating synergies between all related F&B areas.
3. Be passionate and confident in supporting the F&B operation at functions and peak times as required.
4. Work within financial budgets ensuring sales are achieved and exceeded and food and wage percentages are within the required target on a weekly basis.
5. Implement accurate stock takes and ensure they are managed on a monthly effectively basis.
6. Ensure all appliances, fixtures, and fittings are safe and work in accordance with Health & Safety regulations.
7. Assist HOD's in maintaining departmental standards.
8. Work with relevant HOD's to optimize service excellence within the wage budget.
9. Maintain all areas of responsibility to a high standard of cleanliness.
10. Set up systems to monitor and evaluate customer feedback and take appropriate action based on the results.
11. Liaise on daily basis with the Chef regarding customer feedback, daily menus, and business.
12. Ensure billing procedure is correct.

Experience managing in a busy high-end Food and Beverage department. Confident ability in managing financials of a business. You will have a keen eye for detail, organizational skills, and confident in communicating with the team.
