At voco Gosford, modern elegance meets warm hospitality in the heart of the Central Coast. With six exciting hospitality venues, including a modern Australian pub, a rooftop bar, and a signature restaurant, along with two levels of conference and event space overlooking Brisbane Waters, we cater to both business and leisure travelers and provide a new destination for locals to meet.
As Sous Chef, you will use your refined palate to create unforgettable Japanese culinary experiences that tell a story, ensuring quality, safety, and maintaining exceptional standards while keeping the kitchen running seamlessly. We are seeking someone with extensive experience in Japanese-inspired cuisine and sushi making to bring one of our venues to life.
A little taste of your day-to-day :
1. Assist the Executive Sous Chef in controlling food costs through storeroom requisition systems, product storage requirements, standardized recipes, and waste control procedures.
2. Support the Executive Sous Chef in preparing operational reports and analyses, setting forth progress, trends, and making appropriate recommendations.
3. Help the Executive Sous Chef and Operations Team manage payroll and controllable profit within established guidelines.
4. Meet payroll budget expectations by being strategic with coverage, on-call shifts, etc., and support scheduling appropriate staff levels according to budget and business forecast.
5. Participate in interviewing, hiring, evaluating, rewarding, and coaching kitchen personnel as appropriate.
6. Train kitchen personnel in safe operating procedures of all equipment, utensils, and machinery, as well as food production principles and practices.
7. Direct and coordinate the work of production and stewarding staff as necessary.
8. Maintain communication with relevant stakeholders.
9. Oversee food preparation and ensure high-quality food service.
10. Manage kitchen operations, including staff scheduling, ordering supplies, and tracking inventory.
11. Assist with menu creation and development, including seasonal changes and customer demand.
12. Ensure the kitchen is clean and safe.
13. Prepare food with precision, paying attention to consistency, color, texture, and smell.
14. Be a team player with excellent communication and interpersonal skills.
15. Maintain a clean, safe, and organized work environment.
16. Uphold and demonstrate a complete understanding of company policies and procedures.
17. Implement systems and processes to improve task efficiency and strengthen the financial performance of the unit.
What we need from you :
* Degree or certificate in culinary arts preferred.
* Japanese cuisine background with an eye for detail in sushi making.
* A minimum of 2 years’ experience in a similar role and high-volume outlet.
* Knowledge of HACCP.
* Must speak the local language(s).
* Ability to work varied hours/days, including nights, weekends, and holidays, as needed.
