Oriels Cocktail Bar & Eatery is preparing to launch in the heart of Exeter – a brand-new premium venue combining theatrical cocktails, a vibrant entertainment programme, and a stylish dining experience. We're creating a destination where guests can enjoy high-quality food, innovative drinks, and a buzzing atmosphere all under one roof.
As we get ready to open our doors, we're looking for a talented and motivated Head Chef to build and lead our kitchen from the ground up. This is a unique opportunity to join at launch stage and put your stamp on one of Exeter's most exciting new venues.
The Role
As Head Chef, you'll be responsible for shaping the food operation at Oriels – from designing and implementing menus, to recruiting and training the kitchen team, to delivering consistent quality from day one. You'll play a key role in ensuring our kitchen sets the standard for excellence and keeps guests coming back.
Key Responsibilities
Menu Development & Food Standards
* Work with management to create a launch menu that pairs perfectly with Oriels' cocktails and entertainment focus.
* Ensure every dish meets premium standards for flavour, presentation, and consistency.
* Adapt menus seasonally and bring creativity to specials and event-driven food offerings.
Kitchen Operations
* Set up and oversee all kitchen processes in preparation for launch.
* Manage ordering, supplier relationships, and stock control with a focus on cost efficiency.
* Establish smooth service coordination between kitchen, bar, and floor teams.
Team Leadership
* Recruit, train, and develop a brand-new kitchen team ahead of opening.
* Lead by example on shift, creating a positive, professional, and collaborative kitchen culture.
* Organise rotas to balance labour efficiency with service demands.
Compliance & Safety
* Ensure all food hygiene, health & safety, and allergen standards are in place from day one.
* Maintain detailed compliance records and cleaning schedules.
* Deliver and maintain a 5* hygiene rating.
About You
* Previous experience as a Head Chef or Senior Sous Chef in a high-quality hospitality venue.
* Strong understanding of kitchen management, compliance, and cost control.
* Creative flair for menu design with a passion for fresh, well-executed food.
* Leadership skills to build and inspire a new team.
* Driven, organised, and excited to play a part in launching something new.
