To liaise with the CPK Manager to ensure the provision of catering services and the day-to-day production of comprehensive, high-quality, cost-effective meals and menu items for both patients and staff across our University Hospital Dorset sites. Ensure that production meets the demands of our hospital population.
Be part of the management team, assisting, advising, and devising strategies to enable the smooth running of the department. Manage and participate in ensuring a high standard of food production, hygiene, and cleanliness.
Develop new dishes and menus, ensuring variety and quality, and adapting to seasonal ingredients. Ensure consistency and efficiency in production. Oversee the selection and ordering of ingredients, manage stock levels, and minimize waste.
Supervise and direct all kitchen staff (Chefs, Catering Assistants, and Store Persons). Train new and existing staff on techniques, recipes, and safety procedures. Evaluate staff performance, provide feedback, and address any issues or disciplinary matters.
Oversee the maintenance and upkeep of kitchen equipment. Manage food costs, minimize waste, and ensure profitability. Address any issues that arise in the kitchen, from equipment malfunctions to staffing shortages.
Ensure the kitchen adheres to all relevant health and safety regulations, including food hygiene standards. Comply with all company policies and procedures related to kitchen operation. Responsibilities include overseeing catering stores, ensuring all cleaning schedules and production recipes are signed off.
