The Buccleuch Arms is an award winning privately owned Coaching Inn based in St. Boswells. We operate 19 rooms, a bar, an award winning bistrot and two function rooms. We would like to recruit a full time Chef de Partie to help us deliver the required standards of service, quality and performance. We are looking for someone who shares the same passion for seasonal, local and quality produce and a willingness to learn.
The role includes:
Manage a section within the kitchen with the assistance from the other Chefs
Maintain a detailed knowledge of the full menu and be able to explain dish descriptions.
Assisting and supporting the Head Chef
Assisting with the planning of menus and stock control
Ensure that dishes are prepared and cooked according to the specific restaurant standards.
Offering guidance on the preparation, cooking and presentation of food.
Help manage the development and supervision of the Commis Chefs on the section, ensuring they are fully trained and understand their duties.
Ensure that stock is rotated and controlled within the specific section of the kitchen.
Ensure the cleaning schedule is adhered to and that cleaning tasks are delegated as appropriate.
Ensure all policies, procedures, standards and guidelines are carefully adhered to.
Ensuring customers are served efficiently and consistently to a high standard of quality.
The successful candidate will
Have previous experience in a Commis, Chef De Partie, Sous chef role, preferably within a formal dining environment
Must love and enjoy working with food
Must have a high standard of personal hygiene
Good organisational and managements skills
Fully understand how the role contributes to the success of the business
Maintain a good level of understanding of the restaurant and hospitality industry.
Lead by example.
Build effective and constructive relationships.
Communicate clearly, professionally and concisely.
Good attention to detail plus the ability to quickly identify and resolve problems.
Work collaboratively with others in pursuit of team goals.
