Brocket Hall is reimagining its iconic riverside restaurant—formerly Auberge du Lac—into a vibrant new dining destination set within the historic 18th-century hunting lodge, beside the tranquil River Lea. Overlooking the grounds of the Brocket Hall estate, the new restaurant will pair contemporary design, mood-lit interiors, and a stylish modern bar with a fresh culinary direction. We are creating an atmosphere that is relaxed yet refined—modern yet respectful of its heritage—offering a sophisticated and energetic guest experience in a truly majestic setting. We are seeking a dynamic and experienced Restaurant Manager to lead the front-of-house operations at our new riverside restaurant at Brocket Hall. This role requires a confident, service-driven professional with a passion for hospitality, strong leadership skills, and the ability to deliver a high-quality yet relaxed dining experience. The ideal candidate will combine operational excellence with a warm, guest-focused approach, helping to shape the identity of one of the estate's iconic venues.

Responsibilities
* Leading the front-of-house team and being the face to guests, members, and VIP clientele
* Overseeing daily service, event execution, and ensuring seamless collaboration between kitchen and service teams
* Full accountability for the restaurant's financial performance, including P&L management, cost control, labour efficiency, revenue growth, budgeting, and implementation of strategies to maximise profitability
* Driving performance and profitability through guest satisfaction, cost control, and revenue management
* Managing staff recruitment, training, appraisals, and maintaining the highest standards of service
* Taking ownership of bookings, private dining, and exclusive event enquiries to maximise revenue
* Coordinating marketing initiatives, participating in the maintenance of the restaurant website, and building a dynamic customer database
* Developing and executing an annual sales strategy and seasonal promotions in collaboration with the wider Brocket Hall team
Requirements
* Proven experience in a similar role, ideally within a premium dining environment with multi-Rosette or Michelin atmosphere
* Deep knowledge of food and wine, and a love for hospitality excellence
* A strong leader with hands-on management style, able to inspire and train a high-performing team
* Exceptional communication and interpersonal skills
* Immaculate personal presentation and a natural ability to connect with discerning guests
* Organised, commercially minded, and results driven
* Proficient with reservation systems, scheduling software, and basic business reporting
