Commis Chef - Elveden Courtyard
Our restaurant is encompassed within our Courtyard and works alongside a farm shop, butchery and home and garden gift shop. Our main restaurant seats 72 inside and consists of a large outdoor seating area with a possible extra 100 covers. We also have a 30-seater function space. Our whole ethos is based on using locally produced food to serve wholesome dishes with quality in mind.
We are part of the Guinness family owned Elveden Estate which also owns and runs the Elveden Inn & Guinness Arms. The Estate consists of 22,500 acres that includes farming, woods, conservation, game, a Courtyard with shops and a restaurant along with several properties. We're looking for someone who is a team player with a willingness to help and learn in our busy and popular lunchtime venue.
As our Commis Chef, you'll be responsible for assisting with the preparation of fresh elements of high-quality dishes, helping with restocking and stock rotation. You will assist with the compliance with all health & safety and food hygiene requirements and help keep the kitchen clean and organised.
We also prepare fresh meals for Elveden Academy daily and our two pubs, using Estate produce; assistance with food preparation for these enterprises may also be required.
Main Duties will be:
* Create a positive environment for our teams to work in.
* Cooking and preparing elements of high-quality dishes as instructed.
* Assisting in all food preparation processes as instructed.
* Able to work on any section as instructed under the supervision of a Senior chef.
* Assisting other chefs as requested.
* Assisting with deliveries and restocking.
* Assisting with stock rotation with full understanding.
* Assisting with cleaning stations and/or other areas of the kitchen as requested.
* Able to replicate dishes to ensure quality and consistency.
* Assisting Management with all health and safety requirements.
* Assisting Management with all food hygiene requirements.
* Monitoring portion and waste.
* Ensure that food is high quality, and that the kitchen is in good, clean, and hygienic condition. Seeking help and advice to help maintain and improve standards.
* Keep work and food prep stations clean and comply with food safety standards, then put this in to practice.
* Offer suggestions and creative ideas that can improve the kitchen's performance, menu options, and service levels.
* Work well with Front of House to ensure the Pub as a whole delivers good service to the customer, and builds the profitability of the business long term. We work together as one team.
* Work extra hours at busy times.
* Solving of day today problems as they arise and carrying out any other duties commensurate with the role or as requested by the manager.
