We are a premier Equestrian Centre with a charming 64-cover café at our heart. We are looking for a versatile, business-minded Head Chef to take the reins of our kitchen. This isn't a "cookie-cutter" high-street job; it's a role where no two weeks are the same.
The Rhythm of the Role
Our pace changes with the calendar. During the week, you'll lead a relaxed, high-quality café service for our regulars and liveries. When the events arrive, the energy shifts—you'll be responsible for scaling up to provide high-volume "rider fuel" and elegant event menus for competitors and spectators alike.
What You'll Be Doing:
* Creative Freedom: Designing daily café menus, bespoke event catering, and exciting "Theme Nights" (Steak Nights, Bistro Evenings, etc.).
* Business Management: Taking full ownership of food costings, stock takes, and achieving GP targets.
* Team Leadership: Managing kitchen rotas, managing a small kitchen team, keeping it lean during the week and scaling up for major event weekends.
* Safety First: Maintaining our Food Hygiene standards and all Health and Safety documentation.
Who We Are Looking For:
* A "Dual-Speed" Chef: Someone who is happy being hands-on during quiet periods but can lead a team through a very busy event day without breaking a sweat.
* Organized & Proactive: You use the quiet mornings to prep and handle admin so that the busy weekends run like clockwork.
* A Driver: Due to our beautiful rural location, you must have a valid driving license and your own vehicle.
* Commercial Mindset: You understand that with 64 seats, every plate and every penny counts.
Requirements:
* Previous experience as a Head Chef or Senior Sous Chef.
* Strong financial awareness (Costings, Labour %, Stock Control).
* Level 3 Food Hygiene certification.
* A passion for fresh, seasonal food and a "can-do" attitude.
