Overview
Dakota Hotel based in Manchester City Centre are seeking a food and beverage professional with a passion for wines and great service for the exciting opportunity of Bar & Grill Manager. This senior role will oversee quality and service standards through all F&B operations, including our Grill, Bar, Champagne Room, Cigar Terrace, Room Service, and outdoor Terrace. Reporting to the Hotel Manager, the role is responsible for overseeing the levels of service delivered across all food and beverage areas and acting as a hands-on operational leader to drive excellence within the F&B team. There is potential for growth into the role of Food & Beverage Manager.
Responsibilities
* Oversee the F&B operation as the custodian of service across all areas, delivering the highest levels of service and providing on-the-job coaching with a hands-on approach to service and hosting.
* Undertake the role of Duty Manager as assigned and work closely with the management team, especially the Head Chef; collaborate with Reception to maximise resident to diner ratios and deliver the full Dakota experience.
* Drive the commercial running of the F&B operation, including rota development and approval, bookings diary management, sequence of service, and fostering a sales culture through service; maintain supplier contracts and oversee stock takes and purchasing.
* Act as direct line manager for the Assistant Restaurant Manager, Assistant Bar Manager, and the F&B reservations/host team; develop knowledge and motivate the team with passion for food and beverage.
* Collaborate with HR to support the journey of all F&B team members through interview involvement, training, appraisals, and regular one-to-one meetings; implement training plans and deliver on-the-job training to ensure polished guest service across the operation.
* Ensure at least three years of experience as a Restaurant Manager or equivalent in a full-service restaurant.
* Provide leadership experience overseeing beverage in a cocktail bar environment (minimum of one year).
* Experience in a hotel environment including Duty Manager responsibilities (preferable).
* Holding a valid personal license (preferable).
* Fully flexible in working shifts including evenings and weekends (required).
* Promote a culture of positivity and be task-oriented with pride and attention to detail.

Compensation and Benefits
* Earnings are £40,000 plus an annual incentive bonus up to £3,000.
