UBA Shoreditch is looking for a skilled, passionate, and detail-driven Sushi Chef to join our vibrant kitchen team and help deliver an unforgettable dining experience.
This isnt just a sushi role confined to prep and service its a guest-facing, quality-led position embedded in the wider hotel and restaurant experience. Youll work closely with the kitchen brigade, front of house, and events teams to ensure consistency, creativity, and excellence across every service.
What youll do Prepare and present high-quality sushi and sashimi with precision, consistency, and care
Maintain exceptional standards of food safety, hygiene, and cleanliness at all times
Ensure correct handling, storage, and rotation of fresh fish and raw ingredients
Work closely with the Head Chef and wider kitchen team to deliver smooth, efficient service
Contribute to menu execution and development, ensuring dishes are visually striking and technically sound
Manage your section confidently during busy service periods
Support ordering, stock control, and waste management within your section
Train and support junior team members where required
Comply fully with Food Hygiene, Health & Safety, and company policies
Maintain in-depth knowledge of the full menu and confidently explain dish composition when needed
Understand and follow restaurant administration procedures (dockets, stations, table numbers, food labelling, etc.)
Adhere to and support supervision of the cleaning schedule
Work as part of the wider restaurant and hotel team to deliver a seamless guest experience
About you Previous experience as a Sushi Chef in a high-volume, quality-driven restaurant
Strong knowledge of sushi techniques, knife skills, and raw fish preparation
Passion for Japanese cuisine and ingredient-led cooking
High attention to detail with pride in presentation and consistency
Organised, clean, and efficient in your working style
Calm under pressure with a positive, solution-focused attitude
A strong team player with excellent communication skills
