Junior Sous Chef

Hours: 40 per week
A constituent college of the University of Cambridge oriented to mature students. Catering for 200 students and teachers daily. We offer a core feeding of breakfast, lunch, evening meal, all day cafe and lots of high end hospitality. This is a year-round contract operating 7 days a week and work patterns will be 5 days out of 7, alternating a week of early and late shifts, working 1 in 4 weekends. Additional benefits of this location are; meals provided on duty, and free on-site parking when available.
We currently have an opportunity for a creative and effective Junior Sous Chef to join the team at one of our fabulous locations in Cambridge. This role could also suit a CDP or senior CDP looking to progress their career.
Key responsibilities:
* To assist the head chef in the management and provision of food production and delivery for the College, ensuring the highest standards of food service are achieved in an efficient, cost effective and customer-focused manner. To supervise, train and motivate staff to deliver these high standards in compliance with Food and Health and Safety Regulations and Company policy
* To support the head chef in ensuring that food delivery is ready for service at the specified times, correct temperature, sufficient supply of food and is checked for presentation, consistency and quality, including the monitoring of portion control
General Responsibilities:
* To work with the head chef to produce menus, which demonstrate flair, imagination and a commercial awareness that takes into account current trends in the catering industry, incorporating seasonality as well as influences from around the world, meeting customer needs and preferences.
* To ensure all due diligence records are completed correctly and that all checks are being carried out as per the Thomas Franks Food Safety Policy, and to ensure cleaning is being carried out to company standards.
* To manage the ordering, stock rotation and stock levels of food purchased from the agreed suppliers, and in the absence of the head chef to take on all ordering.
* To have an active contribution to an atmosphere of collaborative work between the Kitchen teams and Front-of House Service staff, to develop a team culture based on inclusivity, mutual support, respect, communication and commitment, embedding excellent customer service within all aspects of service delivery.
* To manage the team on shift and oversee the whole catering operation when the Head chef is absent from the kitchen, including but not limited to, running formal dinners, ordering, ensuring cafeteria is served on time, checking allergens and menus are correct, making sure there is enough production of baguettes, paninis and grab and go for the day.
* Ensure all Due diligence and paperwork is completed correctly and perform spot checks on cleaning, food safety and health and safety record keeping to make sure the work is being carried out correctly.
* You will be required to carry out other duties from time-to-time as may be reasonably expected.

* Team working abilities, Listening skills, the ability to work on own initiative, impeccable personal presentation, hygiene and behaviour to others, Food hygiene certificate preferred.
* The ability to be adaptable and be flexible as necessary. Reliable, Honest and able to demonstrate an open attentive approach to customer service.
* Willingness to learn new skills and take some responsibility.
Knowledge / competencies:
* Ability to demonstrate reasonable / good understanding and use of verbal English.
* Ability to demonstrate reasonable / good standard of written English and reading skills.
* Similar experience of customer and / or food preparation environment is preferred.
