The Role Lead the restaurant through pre-opening and launch
Recruit, train and shape a brand-new team
Take full accountability for P&L performance
Drive high-volume service while protecting standards
Work closely with founders and senior leadership on growth strategy
The restaurant will operate at serious volume and requires a commercially sharp, culturally strong operator who understands both energy and control.
The Candidate You will likely:
Have GM experience within a recognised London restaurant group
Have delivered a successful new opening (or significant relaunch)
Be confident managing a £3m£5m turnover business
Understand labour control, GP protection and margin management
Be ambitious and growth-minded
