The Junior Sous Chef is responsible for running a designated section of the kitchen and supporting the delivery of high-quality food across all areas of hotel service, including the restaurant, afternoon tea room, banqueting, and weddings. The junior sous will also deputise in the absence of the sous chef and head chef and be a role model and mentor to other chefs. This role involves preparing dishes to specification, maintaining food hygiene standards, and assisting with training and mentoring junior team members.
THE ROLE:
Assist the Head Chef and Sous Chef in overseeing kitchen operations for all hotel Food outlets, including hotel restaurant, conference & banqueting, afternoon teas, weddings & special events
Supervise daily food preparation and production to ensure consistent quality and presentation.
Support with the training, coaching, and development of the kitchen team.
Ensure all food safety, hygiene, and health & safety regulations are followed (e.g., HACCP, EHO compliance).
Work closely with the events and front-of-house teams to plan for and execute high-volume functions.
Monitor kitchen inventory and assist with ordering, stock rotation, and waste management.
Store food items correctly, including labelling and rotation in line with kitchen procedures.
Lead the kitchen in the absence of the Head Chef and Sous Chef, ensuring service standards are maintained.
Help ensure consistent execution across multiple simultaneous events and services when required.
