Position details
* Position: Sous Chef
* Employer: Fine Dining Japanese Restaurant
* Location: Central London
* Gross OTE salary package: circa £55,000 + (incl. share of service charge + targeted bonus)
* Weekly hours: 40 to 48 hours over 5–6 days

Responsibilities
Working under the Head Chef, you will play a senior role in kitchen operations, supervise junior chefs, and contribute to the preparation and presentation of dishes aligned with the establishment’s menus. You will handle purchasing and ordering of supplies, monitor food costing and gross profit, and perform relevant administrative tasks related to the role.
Qualifications and requirements
* Eligibility to live and work in the UK
* Experience in the preparation of authentic high-quality Japanese cuisine
* Technical knowledge of ingredient quality, sourcing, measuring, and formulation
* Industrial training from a world-renowned culinary/hospitality institute
* At least 3 years in a Sous Chef role plus a minimum of 9 years of prior experience in ascending roles
* Relevant Health & Safety credentials and knowledge of HACCP protocols
* Computer literacy, plus sound financial and business acumen
* Resident within commutable distance of up to one hour
* Attributes include performance orientation, leadership, time management, attention to detail, teamwork, creativity, energy, and a strong work ethic
* Bachelor’s or master’s degree in culinary arts or a related field
* Ability to work in a fast-paced environment and under pressure
