7. Daily food production and preparation for all services this includes Breakfast, Salad Bar, all proteins, cold sweets, cakes, scones etc. Follow Menu Cycle, ensuring quantities, portion size and production methods are always adhered to. Making full use of any leftover food.
8. Tasting of all dishes prepared and adjusted where necessary.
9. To ensure all counters are set up to the company’s high standard using in house Planograms.
10. Completion of wastage records, temperature records, delivery records & cleaning schedules.
11. Reporting any discrepancies to your Line Manager / Supervisor
12. Ensure that a ready Supply of all service items are available at all times, liaising with front of house staff to ensure a smooth, efficient service to our customers.
13. To always ensure correct Portion Control.
14. Ensure back of house is always kept clean and tidy. Including all fridge’s & freezes, report any breakdowns & Malfunctions
15. Comply with all legal & company Procedures relating to food safety, hygiene, health & safety & personal hygiene
16. Assisting the Head chef with stock take, orders & special days.
17. Deputizing for the head chef in his absence
18. To assist with the daily cleaning
19. Carry out any reasonable request from any member of the management team at any time. And report to the Duty Manager / Head Chef at the end of the shift.
