Senior Sous Chef – Champneys Eastwell Manor
Contract: Zero Hour
Salary: £20.00 per hour plus service charge

Responsibilities
* Assist the Head Chef in the management and running of the kitchen, ensuring the team stays motivated and all food is prepared to the highest standards.
* Support with menu development and design, taking into account the nutritional requirements of Champneys healthy eating cuisine.
* Support the Head Chef in recruiting, managing, training and evaluating the performance of all kitchen staff to Champneys high standards.
* Take responsibility for the management and running of the kitchen in the absence of the Head Chef, including supervising staff.
* Update the People System in relation to daily hours worked by staff members and complete rotas as instructed in the absence of the Head Chef.
* Prepare and present Buffets and food on the menus to the required standard.
* Maintain and improve the standard of service and operating standards to maximise guest satisfaction.
* Gain working knowledge of the Champneys healthy eating philosophy and ensure staff are trained and that this philosophy is implemented in the department.
* Maintain a high level of cleanliness in the kitchen, ensuring compliance with legislative standards.
* Order food items for all outlets, checking prices, quality and quantity; ensure nominated suppliers are used on all occasions.
* Control departmental food cost expenditure and minimise food wastage.
Requirements / Qualifications
* Experience in a senior kitchen role with ability to manage and motivate a team.
* Ability to recruit, train and manage staff to a high standard.
* Knowledge of food cost control and menu planning.
* Understanding of and commitment to the Champneys healthy eating philosophy and its implementation in the kitchen.
* Strong focus on cleanliness and compliance with legislative standards.
* Experience ordering and managing suppliers and inventory.
