Sous Chef – High-End Resort Restaurant

The Restaurant

Our flagship 220-seat restaurant offers a 2-rosette à la carte menu, a chefs’ table experience, and a Sunday carvery. With a theatre kitchen at its heart, the team prepares and cooks steaks and roasts in full view of our guests. Seasonal menus and high-volume covers make this an exciting environment for a skilled and ambitious Sous Chef.

Salary
1. Total on-target earnings: £39,000 per annum

The Role

As Sous Chef you’ll ensure the smooth running of the kitchen and consistently high standards of food delivery. You’ll work closely with the Head Chef and lead a talented brigade in delivering our à la carte menu.

Your responsibilities will include:

2. Cooking and delivering seasonal dishes using the best local ingredients

3. Maintaining high standards of food safety, allergens and dietary compliance

4. Running safe, compliant kitchen operations, including temperature logs and HACCP

5. Leading the kitchen during busy services and ensuring fast, accurate delivery

6. Managing stock, ordering and supporting menu development

7. Training, developing and motivating your team

8. Deputising for the Head Chef

About You

You’ll bring:

9. At least 2 years’ experience in a fine-dining kitchen at Sous Chef level or above

10. Strong leadership and communication skills

11. A passion for seasonal, high-quality ingredients

12. A commitment to consistency and portion control

13. Knowledge of COSHH and HACCP food storage regulations
