Position Summary
We are seeking an experienced Pastry Chef or Production Chef to lead small-batch frozen pastry production on a monthly basis. This is not a daily kitchen role. The position focuses on organizing and executing large, scheduled production runs in collaboration with our dark kitchen partner, including sourcing raw materials, managing temporary staff if needed, and overseeing freezing, packaging, and palletization.
This is an ideal role for a chef who enjoys structured production, logistics, and process—not daily service.
Key Responsibilities
* Plan and execute monthly large-batch pastry production runs
* Procure and manage all raw materials and ingredients
* Coordinate with our dark kitchen partner to schedule kitchen access and equipment
* Develop and follow standardized production recipes and processes
* Recruit, organize, and manage temporary production staff when needed
* Oversee preparation, freezing, and quality control
* Manage packaging, boxing, labeling, and palletization of frozen product
* Ensure food safety, hygiene, and compliance with all regulations
* Track yields, waste, and production efficiency
* Provide feedback to improve consistency, scalability, and cost control
Qualifications
* Proven experience as a Pastry Chef, Production Chef, or similar role
* Experience with frozen or large-batch food production strongly preferred
* Strong understanding of ingredient sourcing and supplier management
* Ability to organize and lead short-term production teams
* Comfortable working in a structured, industrial-style kitchen environment
* Strong attention to consistency, quality, and process
* Knowledge of food safety, freezing, and storage standards
* Self-directed and reliable, with strong planning skills
Work Structure
* Project-based / part-time / contract-style role
* Typically one large production run per month
* Production may require 1–3 consecutive days depending on volume
