Food and Beverage Duty Manager – Horto Restaurant
Role Overview
The successful candidate will have strong operational excellence and be capable of running shifts when required. They will supervise and coordinate teams across the restaurant, allocating duties and leading the team in the absence of the Manager and Assistant Managers. The role is responsible for ensuring all individuals and teams consistently adhere to Rudding Park standards and procedures. This position plays a key role in delivering an exceptional guest experience through consistent luxury service standards, operational excellence, effective financial control, and full compliance with brand, legal, and company requirements.
Qualifications
* Previous experience working in a restaurant
* Passionate about guest service
* Strong ability to motivate the team
* Works well under pressure
* Working pattern includes 5 over 7 days, evenings and weekends
Key Responsibilities
* Be an ambassador for our guests at Rudding Park
* Support the management team with training of team members
* Demonstrate how to close the shift in terms of billing
* Ensure all guests are greeted properly within the Restaurant
* Ensure the restaurant is opened following set procedures
* Ensure functions and events are managed in correct way
* Complete relevant shift reports and use of systems
* Support communication within the Management Team through handover process and operating procedures such as opening and closing
* Act as a point of contact for guests during the shift, handling feedback, special requests, and complaints with professionalism and discretion
* Lead service recovery in line with hotel expectations, ensuring guest satisfaction and retention
* Maintain a strong presence on the floor during service periods, engaging with guests and teams
* Ensure service is anticipatory, personalised, and aligned with brand standards

* Enhanced pay – 50p per hour for evening work after 7pm (Sunday‑Thursday), £1 per hour for weekend day work until 7pm (Saturdays and Sundays), £1.50 per hour for evenings from 7pm (Friday and Saturdays)
