About Papapoké
We're a small, fast-growing poke & sushi-roll spot on Leith Walk. Compact team, high standards, friendly vibe. We're looking for a hands-on Kitchen All-Rounder who can cook, prep, run the line, and uphold food safety and consistency.
What you'll do
* Open the kitchen and set up the line (rice, sauces, veg, protein portioning).
* Assemble bowls quickly and cleanly during service (target 6–8 min per bowl).
* Maintain food safety: temps, allergen control, FIFO, date labelling, HACCP logs.
* Keep stock & waste under control; prep small, frequent batches for freshness.
* Handover "PM kit" for evening service (pre-portioned proteins, rice, toppings).
* Clean as you go; support closing/weekly deep-clean rota when needed.
* (Nice to have) Basic FOH handover: Deliveroo/SumUp awareness.
What we're looking for
* Solid line/prep experience in a fast casual or sushi/poke kitchen.
* Food Hygiene Level 2 (or willing to complete in week 1).
* Allergen awareness; tidy workstation, excellent hygiene.
* Calm under pressure, positive with teammates and couriers.
* Basic English for service and kitchen communication.
Nice to have
* Sushi rice & fish portioning skills; previous poke/sushi experience.
* Knowledge of HACCP/SFBB, pH control for sushi rice.
Schedule
* Daytime service. Typical core kitchen shift 09:30–15:00; FOH covers evenings.
* Must be available Fri/Sat peaks (we rota fairly in advance).
