The Role: Head Chef

Reports to: Head of Cooked Food & Production
Summary of the Role
You will be responsible for the day to day running of the Kitchen and ensure focus on communication, driving timely production, profitability and training through the successful leadership of the Team. This role involves clearly communicating instructions, delegating tasks, providing feedback, and fostering a positive work environment to ensure efficient operations and high-quality food production. The Head Chef also acts as a liaison between the kitchen and other departments and with suppliers, requiring strong coordination and negotiation abilities.
Main Duties
* Take ownership of department to ensure optimum performance - growing sales and improving margin.
* Review production schedules to determine variety and quantity of goods to cook and to assemble supplies and equipment needs for daily preparation of food.
* Ensure the highest standards and consistent quality in daily preparation and keep up to date with new recipes and preparation techniques.
* Produce products of consistent quality, giving details of all the recipes, ingredients and packing standards
* Accurately and timely complete all required documentation to ensure clear traceability.
* Ensure HACCP File is adhered to and that all legal requirements are met, including but not limited to, temperature checks, cleaning schedules and food safety procedures
* Lead and engage the Team to deliver exceptional standards
* Demonstrate commercial awareness by taking control of costs and improving margins.
* Critically appraise and take control of waste, shrinkage & stock loss in the department, introducing initiatives to improve.
* Develop new food concepts & initiatives in line with the Carnbrooke business strategy
* Maintain a safe food environment within your department, complying with health and safety regulations, internal & external audit requirements.
Person Specification
The Person must have:
Essential Criteria
* Proven work experience as a head chef/ kitchen manager 5+ years
* Appropriate Food/ Hospitality qualifications/ Food Safety
* Strong leadership, motivational and people skills
* Ability to understand financial drivers for the business and interpretation of financial data relevant to role
* A courteous and helpful manner, with an enthusiasm for customer service
* Good communication skills and the desire to give our customers an enjoyable food experience.
Job Types: Full-time, Permanent
Pay: £32,000.00-£35,000.00 per year
