Wine Manager – New Opening Summer 2026
Location: Central London
Salary: £50,000 - £60,000
A new restaurant opening in Central London in Summer 2026 is looking for a Wine Manager to take ownership of the wine offer from day one. The role will work closely with the Head of Wine and the wider restaurant team to build a list that fits the concept and keeps things relevant, interesting and commercially sound. This isn’t a formal or traditional setup - the focus is on personality, knowledge and creating a great guest experience without the stiffness.
The Role:
1. Lead the wine programme on site and take ownership of the list
2. Work closely with the Head of Wine on selection and direction
3. Manage supplier relationships and buying
4. Deliver staff training and build wine confidence across the team
5. Collaborate with the kitchen on pairings
6. Be present on the floor, engaging with guests and driving standards
The Person:
7. Experience in a quality restaurant or hotel environment
8. Strong wine knowledge with WSET Level 3 or similar
9. Comfortable leading a team and setting the tone on the floor
10. Engaging, approachable and confident with guests
11. Creative but commercially aware when building lists
12. New opening experience helps, but isn’t essential
