We are looking for an experienced and passionate Head Chef to lead the kitchen at Tellers on the Shute, a brand new independent restaurant opening this summer in the beautiful coastal town of Bude, North Cornwall .
This is a fantastic opportunity to join a new restaurant from the very beginning and play a key role in shaping the kitchen, building the team, and establishing a restaurant that will become a favourite destination for both locals and visitors.
About Tellers on the Shute Tellers on the Shute will be a Modern British Brasserie celebrating the very best of British favourites, with a strong focus on quality ingredients and local Cornish produce .
Our menu will offer variety and choice, featuring well-loved British classics and popular dishes designed to appeal to a wide range of tastes and dietary requirements.
The restaurant will seat 80 covers initially, with plans for future expansion, and will operate lunch and dinner service .
Located in a beautifully restored historic building in the heart of Bude, Tellers aims to become a welcoming community restaurant with a strong reputation for quality food and relaxed hospitality.
Brand New Kitchen You will be working in a fully equipped, brand new kitchen, including modern professional equipment such as:
Rational iCombi oven
Induction cooking suite
Newly fitted commercial kitchen designed for efficiency and high-quality service
The Role This role offers the opportunity to build something from the ground up .
As Head Chef you will:
Recruit and build the kitchen brigade
Work alongside the owners to bring the restaurant vision to life
Contribute to menu development and seasonal changes
Lead a team focused on fresh cooking and high standards
Establish strong kitchen systems and maintain excellent food safety standards

About You We are looking for a hands-on Head Chef who enjoys leading from the front.
You will be:
Passionate about cooking fresh, high-quality food
Experienced in gastro pub, brasserie or high-quality casual dining kitchens
Calm and organised under pressure
Friendly, approachable and supportive of your team
Conscientious and detail-oriented
Comfortable managing kitchen operations including ordering, stock control and food safety compliance
Experience as a Head Chef or strong Sous Chef ready to step up will be considered.

Working Hours Full-time position (typically 4550 hours over 5 days ).
The restaurant will operate 7 days a week, offering lunch and dinner service. Summers in Bude are lively and busy with tourism, while winters are quieter and more community-focused.
Start Date Ideally spring / early summer, ahead of the restaurant opening, allowing time to assist with menu development, recruitment and kitchen setup.
