Our Mayfair opening represents the next evolution of the concept: a flagship experience defined by refined design, discreet luxury, and a menu centred around seasonal, sustainably sourced ingredients. Guests can expect standout dishes such as expertly prepared bluefin tuna, delicate sushi and sashimi, robata-grilled selections, and contemporary plates that balance tradition with innovation. A carefully curated wine and sake programme will play a central role in enhancing the guest experience.
The Role
As Assistant Restaurant Manager / Sommelier, you will support the General Manager in overseeing daily operations while taking ownership of the wine and beverage programme. You will play a key role in delivering exceptional service, driving standards, and creating a refined and memorable guest experience through expert pairing and leadership on the floor.
Key Responsibilities
Support the General Manager in the day-to-day running of the restaurant
Lead service alongside the management team, ensuring excellence at every touchpoint
Curate, manage, and continuously develop the wine and sake list
Provide expert recommendations and pairings to enhance the guest experience
Train and mentor the front-of-house team on wine, sake, and beverage knowledge
Maintain strong relationships with suppliers and manage stock control
Monitor service standards, guest satisfaction, and team performance
Handle guest feedback with professionalism and attention to detail
What Were Looking For
Previous experience in an Assistant Manager or Sommelier role within a premium or fine dining environment
Strong wine knowledge (WSET Level 2 minimum; Level 3 or equivalent preferred)
Passion for Japanese cuisine and an interest in sake is highly desirable
Proven leadership skills with the ability to inspire and develop a team
Excellent communication and organisational abilities
A polished, professional presence and strong attention to detail
Ability to thrive in a fast-paced, high-end environment
