Position Overview:
As Sous Chef, you will be the second-in-command in the kitchen, supporting the Head Chef in overseeing all culinary operations. From supervising food prep and managing service to training team members and maintaining high standards of quality, cleanliness, and consistency — you’ll be a key leader in ensuring Rio’s food is as unforgettable as the experience itself.

Key Responsibilities
Kitchen Leadership & Operations
* Assist the Head Chef in managing the day-to-day kitchen operations, ensuring smooth and efficient service.
* Supervise line cooks, prep staff, and kitchen porters across all stations — including grill, hot line, salad bar, and desserts.
* Lead kitchen operations during Head Chef’s absence.
Food Quality & Execution
* Ensure all dishes meet Rio’s standards for taste, presentation, portioning, and temperature.
* Maintain consistency across all service periods and menu items, especially in traditional Brazilian preparations.
* Monitor prep levels, cooking timelines, and dish accuracy throughout service.
Training & Development
* Mentor and train junior chefs in food preparation techniques, sanitation, safety, and presentation.
* Support team development through regular feedback, coaching, and hands-on leadership.
* Reinforce authentic Brazilian culinary techniques, including grilling, carving, marinating, and plating.
Health, Safety & Hygiene
* Enforce all food safety, sanitation, and cleanliness standards in accordance with local regulations and Rio policies.
* Monitor HACCP documentation and ensure proper storage, labelling, and temperature control.
* Maintain a clean, organized, and hazard-free kitchen always.
Inventory & Cost Control
* Assist with ordering, stock rotation, and inventory checks to reduce waste and control food costs.
* Ensure proper handling and storage of all food products.
* Collaborate with the Head Chef and General Manager to manage supplier relationships and product quality.
Qualifications
* 3+ years of professional kitchen experience, with at least 1–2 years in a leadership or sous chef role.
* Experience in a churrascaria, Brazilian steakhouse, or high-volume restaurant strongly preferred.
* Deep knowledge of grilling, roasting, butchery, and authentic South American flavours.
* Strong leadership and communication skills; capable of motivating a team under pressure.
* Excellent organizational and time-management abilities.
* Knowledge of food safety regulations and best practices (HACCP certification a plus).
