The Executive Sous Chef is responsible for the full food service across two kitchens. This includes managing menus for A la Carte, set lunches, extensive C&B, weddings, bar service, breakfast, and room service. The role involves overseeing one team of chefs across both sites, ensuring the highest standards are maintained. There is a separate pastry kitchen handling desserts and an extensive afternoon tea business. This hands-on role requires excellent oversight and communication with multiple departments. The current kitchen turnover is approximately £2.5 million annually, with plans for growth.
Key responsibilities include:
1. Overseeing the preparation of all dishes within both kitchens.
2. Issuing clear instructions to Sous Chefs and ensuring adherence across all sections.
3. Staying updated on industry trends and collaborating with the Executive Chef to develop new, exciting, and nutritionally balanced menus.
4. Reviewing menus with a focus on seasonality.
5. Managing stock accurately, including conducting efficient stock takes.
6. Supporting menu development with recipes and allergen information.
7. Maintaining budgetary controls with a focus on cost-effectiveness.
8. Ensuring high standards of food quality across all areas.
9. Implementing consistent plating guides for all menus.
10. Ensuring accurate and proper stock rotation and ordering, using preferred suppliers where possible.
