Zebedees are the UK's leading nursery meals provider delivering fresh, hot meals for nursery children in time for lunch. Based in the rural village of Laughton, East Sussex, we produce over 11,000 meals a day for our nursery clients throughout London and the South East.
Due to expansion, we are currently recruiting a Head Production Chef to join our kitchen team. You will oversee the successful operation of the production department, producing high volume meals and dietary alternatives to the highest standard.
Our Head Production Chef duties include:
* Production and cooking of nursery meals, in line with menu requirements.
* Production and cooking of dietaries, ensuring ingredients and recipes are followed to spec.
* Management of a team of 3-4 staff.
* Strong communication with other kitchen departments.
* Ensure food is prepared on time, ready for delivery.
* Monitor food safety and quality, ensuring consistently high standards and errors are rectified prior to service.
* Prepare production for the following day.
* Overall responsibility for all aspects of kitchen safety including kitchen machinery, food hygiene, HACCP, allergen awareness, cross contamination control, and health & safety.
* Ensure the production area is kept clean and tidy.
To succeed you should have:
* Previous experience in a senior kitchen position within high volume caterers.
* A natural leader with proven ability to manage, lead, and develop a team.
* Thorough knowledge of regulatory requirements in food processing for high risk groups.
* Solid understanding of allergens and safe practices when catering for people with allergies.
* Ability to work under pressure in a fast paced environment.
