Assistant Manager – Cotswolds Pub & Fine Dining Restaurant

Salary: £38,950 per annum + Tronc
Hours: Full-time, 48 hours per week (including weekends)

About the Role
We are seeking a passionate and experienced Assistant Manager to join a beautiful, countryside pub with a fine dining restaurant located in the heart of the Cotswolds.
This is an exciting opportunity to be part of a fast-paced, evolving hospitality operation where no two days are the same. You’ll play a key role in supporting the day-to-day running of multiple departments, working closely with the senior team to uphold exceptional standards and deliver a memorable guest experience.

Key Responsibilities
* Oversee daily service operations, ensuring exceptional and consistent guest experiences across all departments.
* Act as a welcoming and professional host for both guests and residents.
* Lead and motivate the front-of-house team to deliver smooth, high-quality service throughout all shifts.
* Support the restaurant, pub, and garden setup each day—ensuring cleanliness, stock replenishment, and attention to detail.
* Be fully knowledgeable of food and beverage menus, confidently recommend dishes and drinks, and provide accurate allergen information.
* Maximise revenue through efficient table management and upselling opportunities.
* Collaborate with the kitchen and bar teams to develop and improve food and beverage offerings.
* Work in partnership with other departments (housekeeping, admin, kitchen, bar) to ensure seamless operations and a cohesive guest journey.
* Maintain up-to-date staffing plans and schedules, ensuring the business is appropriately resourced at all times.
* Support with team recruitment, absence management, and performance reviews.
* Oversee cash handling, daily banking, and accurate financial transactions.
* Maintain strong communication with the General Manager and report on key operational updates.
* Ensure all health and safety standards are upheld and any concerns are escalated appropriately.

* Previous experience in a hospitality management or supervisory role, ideally within a premium pub or restaurant setting.
* Strong leadership skills and a hands-on approach to team management.
* Passion for delivering excellent customer service with a warm, engaging manner.
* Sound understanding of front-of-house operations, stock control, and licensing requirements.
* Financial awareness, with the ability to support profitability and control costs.
* Calm, proactive problem-solver with excellent decision-making skills in a fast-paced environment.
