As a Junior Sous Chef at Mad Swans in the South Downs, you will play a key role in the kitchen leadership team and deliver exceptional food to our guests. This brand‑new role offers an exciting chance to grow with us, develop your skills, and help shape a special dining experience.
Responsibilities
* Assist in food preparation and collaborate with the Head Chef and the Sous Chef.
* Work closely with both kitchen and front‑of‑house teams to ensure the best service.
* Offer suggestions, creative ideas and ways to improve kitchen performance, menu options and service.
* Oversee and supervise the kitchen team.
* Contribute to a positive, respectful, and high‑performing kitchen environment.
* Maintain impeccable hygiene and food safety standards so every dish meets guest expectations.
* Help complete weekly stock takes, manage orders and deliveries, ensuring SOPs, recipe specifications and procedures are followed through the use of Procure Wizard.
* Represent Mad Swans and the wider company with pride and professionalism.
* Report any health & safety issues, potential hazards, accidents or near misses to the Head Chef, who will report them to senior management during the weekly H&S meeting.
Qualifications
* Experienced and has previous experience in a Junior Sous Chef role.
* Genuine passion for food, creativity and high standards.
* Focused on food quality, presentation and hygiene.
* Excellent communicator.
* Potential to be a good leader.
* Strong organisational skills and ability to multi‑task.
* Happy to be hands‑on and assist with day‑to‑day duties as part of a small team.

* Food Safety Level 3 qualification is desirable but not essential.
Location & Compensation
Mad Swans is a full‑time permanent position located in Blacknest, near Farnham & Alton. Full address: Frith End Road, Blacknest, Hampshire, GU34 4QL.
Earnings are up to £38,000 per annum, inclusive of TRONC (Tips & Service Charge). The role works 48 hours per week across any five days out of seven, with regular weekend hours. Kitchen operational times are 6:00 am to 11:00 pm, and shift times will vary in line with the operating calendar and business needs.
