Dulse & Brose is a modern Scottish restaurant that celebrates Skyes incredible natural larder. The menu champions fresh seafood, Highland meats, and seasonal island produce, delivered through confident, unfussy cooking.
The atmosphere is refined yet relaxed; contemporary, welcoming, and rooted in genuine Highland hospitality. Guests dine in a stylish setting overlooking Portree Harbour, enjoying thoughtful food and a carefully curated drinks list.
What We Offer
£30,000 £33,000 salary (depending on experience)

The Role
As Restaurant Manager, you will be the driving force behind Dulse & Broses day-to-day success. Youll lead from the floor, set service standards, and create a culture where guests feel genuinely looked after and the team feels proud of what they deliver.
Working closely with the Head Chef and Food & Beverage leadership, youll balance exceptional guest experience with strong commercial performance.
Key responsibilities include:
Leading daily restaurant operations with a guest-first mindset
Recruiting, training, and developing a confident and motivated front-of-house team
Setting and maintaining high service standards across every service
Collaborating on menus, specials, and GP margins with the kitchen team
Managing rotas, labour, costs, and KPIs to meet financial targets
Handling guest feedback with professionalism, warmth, and solutions-focused leadership
Ensuring full compliance with health & safety and licensing standards
This role suits a hands-on manager who enjoys being present on the floor, coaching their team, and creating polished yet relaxed dining experiences.
What Were Looking For
Proven experience in a supervisory or management role within a busy restaurant or hotel environment
A genuine passion for food, drink, and great hospitality
Strong leadership skills with the ability to inspire and retain great people
Solid understanding of GP margins, menus, and service delivery
Commercial awareness with experience managing KPIs and costs
A calm, resilient, and hands-on approach
Excellent communication and organisational skills
A desire to build both a career and a lifestyle on the Isle of Skye
