We are seeking an experienced high-volume Cellar Manager to lead retail cellar operations at Ascot Racecourse; one of the UK’s most prestigious sporting venues. This is a senior, hands-on leadership role with full accountability for stock control, financial performance and operational readiness across a complex, multi-outlet environment generating c.£5m in beverage revenue. This role is suited to an established Cellar Manager from a stadium, arena, racecourse or large-scale events venue - not an entry-level step-up opportunity. The Role You will: Lead all retail cellar operations across race days and major events, including Royal Ascot Own stock-to-cash reconciliation, audits, transfers and variance reporting Protect margin through tight stock control and wastage management Plan and coordinate high-volume deliveries and distribution across multiple outlets Ensure draught systems performance, line cleans and equipment readiness Manage and develop Cellar Supervisors and event-day teams Maintain a safe, secure and fully compliant cellar operation What We’re Looking For Essential: Proven leadership in high-volume beverage/cellar operations Strong commercial and financial acumen Experience managing multi-outlet stock control and reconciliation Advanced Excel and stock control system capability Confident leadership of large operational teams Desirable: Personal Licence, Forklift licence, clean driving licence.
