We are looking for a friendly, professional and dynamic manager to lead our small but busy pub in Campsea-Ashe, near Woodbridge.
The Duck is a small food-led pub situated opposite Wickham Market train station. We benefit from trade from the local area including the tourist hotspots of Woodbridge, Framlingham, Snape and Aldeburgh. We have a core group of regular local drinkers but currently the majority of our trade comes from the restaurant, as we are known for providing high-quality pub food with a focus on local meat and fish and seasonal ingredients. We are one of four businesses owned and operated by Vernon Blackmore, who has been a publican in the area for upwards of twenty years and is renowned particularly for his South East Asian cuisine.
Like many businesses in the area our trade varies with the seasons but during peak Summer time we would anticipate serving between 20-50 people for lunch and up to 80 for dinner. We have just thirteen tables inside but our large garden doubles our seating capacity.
Our small team consists of about fifteen members of staff. You would be managing up to four members of staff per shift, but also be comfortable working alone or alongside our head chef on the quieter afternoons and winter evenings.
Key responsibilities: Supervising shifts in the pub, including busy Sunday lunches, and Friday and Saturday nights.
Monitoring cash flow and pushing to meet our weekly targets, especially during the quieter winter season when the pub can benefit from events such as quiz nights, themed food nights and promotions to draw customers in
Managing functions, which can range from Christmas parties of 15-30 people to Summer weddings which involve private hire of the pub and garden
Maintaining a high-level of restaurant service whilst encouraging a friendly and inviting atmosphere in the pub for families, bar drinkers and other guests
Hiring and training new staff to a high standard in both the restaurant and bar
Weekly rotas for the front of house team in coordination with out Head Chef
Weekly ordering, stock rotation, and monitoring of GP
Cellar management - we are a real ale pub and would like our manager to be confident with cellar management including line cleaning, however, we are happy to provide training in this area
Managing our social media presence and marketing through other channels- whilst we do not expect someone to have experience as a content creator, Instagram and Facebook allow us to keep our guests informed on events, new menus and promotions in the pub. We would be looking for our manager to show interest in promoting the pub in other ways, for example through local magazines, with food reviewers, or at food expos and fairs such as the local Aldeburgh food and drink festival.
Upselling products, events and promotions both in service and via our marketing tools
We can offer: Good work-life balance - the pub is closed one and a half days per week to allow all staff to take a well-earned break. Depending on your needs the rota can be flexible however we would expect our manager to work primarily Friday-Sunday which are the busiest three trade days
A competitive salary with excellent gratuities - for the right candidate we would consider £13-£15/hour, dependent on experience. Gratuities are split fairly between the staff and can reach £30 each on some of our busier shifts
