Job Description
We are seeking an experienced Culinary Compliance Officer to ensure the highest level of compliance and performance within our onboard culinary operations. This role is central to maintaining alignment with Financial and Performance Management Systems (FPMS), inventory controls, and culinary SOPs, while mentoring teams and influencing process improvement from preparation to plate.
The successful candidate will act as a key liaison between the culinary team and leadership, with a strong presence in critical areas such as butcher, fish preparation, and production, ensuring compliance, efficiency, and excellence in execution.
You will be based onboard & travel time to time between different ships.
Key Responsibilities:
* Lead oversight of the entire FPMS process, including all culinary production areas—from butchery and thawing to meal service, repurposing, and waste management.
* Maintain a consistent, hands-on presence in operational areas to monitor thawing protocols, inventory flow, and SOP compliance.
* Deliver targeted training and mentorship to both new and existing crew, as well as leadership at all levels, to drive accountability and performance excellence.
* Identify and report operational successes and compliance gaps to leadership; collaborate on developing strategies and action plans for continuous improvement.
* Ensure front-of-house (FOH) and POS systems are aligned with back-of-house practices for smooth service execution.
* Support initiatives that enhance operational efficiency, reduce waste, and optimize resource utilization.
* Act as a subject matter expert for all culinary compliance standards onboard.
Requirements:
* Proven expertise in culinary operations, front-of-house systems, and point-of-sale (POS) functionality.
* Strong leadership background with experience training and mentoring across all levels of shipboard culinary staff.
* Demonstrated ability to manage FPMS systems and processes from production through to waste management.
* Effective communicator with the ability to influence, coach, and align diverse teams with operational goals.
* Experience creating and executing improvement strategies based on performance metrics and compliance audits.
* Previous cruise ship, hospitality, or large-scale catering experience is highly desirable.
* Willingness to travel and spend extended time onboard as required.
