We are looking for an experienced, clean and organised Head Chef to lead our kitchen team (6 in winter ca 10 in summer ) for our fun and busy beach side bistro.Summers are busy with up to 400 covers a day between breakfast, lunch and dinner This is an exciting opportunity to be part of launching a new elevated menu and rebranding with Joe Baker ( from petchi restaurant ) at the helm of Le Braye as Operations Director /Exec Chef. We are a casual dining restaurant but with emphasis on seasonal cooking using local / mediterranean ingredients. About the role -The Head Chef will be fully responsible for the daily kitchen operations ensuring a high standard of preparation and presentation. -Lead, train and motivate the kitchen team creating a calm and supportive environment. -Manage stock control, wastage, ordering and GP -Implement excellent food and safety measures, ensuring we maintain our 5 star hygiene rating -Kitchen rota, managing wage percentages -Work in conjunction with EXEC chef delivering seasonal menus What we offer - Competitive Salary with bonus scheme -Supportive professional Working environment ( with a view ) -License to live and work in Jersey -Accomodation with reduced rent as part of package if required - Good Work /Life Balance -Summer mix of straight and split shifts -Winter mainly straight shifts, only 2 evenings per week - 2 days off per week About you Several years experience at Head Chef or Senior Sous Level with proven Leadership skills Must keep calm under pressure and enjoy the buzz of a busy place Excellent English including keyboard/ computer skills -Passion for good food and good ingredients -Must have valid driving license

Ca 100 covers inside and ca 80 outside We are open all year round, 7 days in summer including evenings, mainly day time in winter.
