Responsibilities

* Design menus to ensure proper portion, arrangement, and garnish for all dishes.
* Ensure proper portions on dishes and minimize wastage; maintain plate appearance.
* Maintain fluid communication with F&B Front of House managers, supervisors, and associates.
* Ensure quality of food items and notify suppliers if a product does not meet specifications.
* Order food, chemicals, and controllables in line with forecasted business levels and adjust as necessary.
* Communicate any assistance needed during busy periods to the Director of Food & Beverage to agree staffing levels for optimum guest service.
* Ensure all dishes on every menu have a food spec, including photo and allergy information; each culinary associate signs off training before menus go live.
* Monitor kitchen and back-of-house equipment to ensure proper operation and compliance with food hygiene and safety guidelines.
* Report maintenance issues to the Director of Food & Beverage and Director of Engineering.
* Work proactively with the F&B Front of House team to enhance guest service and knowledge through daily tastings.
* Daily monitoring of kitchen and back-of-house operations to ensure excellence in food production, service, and cleaning.

* Follow all company safety and security policies and procedures.
* Report maintenance needs, accidents, injuries, and unsafe conditions to management.
* Complete safety training and certifications.
* Ensure uniform and personal appearance is clean and professional.
* Maintain confidentiality of proprietary information.
* Communicate with others using clear and professional language.
* Develop and maintain positive working relationships with others.
* Support the team to reach common goals.
* Listen and respond to the concerns of other employees.
* Ensure adherence to quality expectations and standards.

Preferred Qualifications

* Education: High school diploma or GED equivalent.
* Related Work Experience: At least 3 years of related work experience as a Sous Chef.
