Hours: Full-time, 40 hours per week, Day Shift.

As we continue to grow, we are looking for a passionate and skilled Shift Leader to join our Viennoiserie team at our London Fields bakery.
Role Overview In this hands-on role, you will work closely with our head of pastry to deliver exceptional viennoiserie products while supporting and leading a small team of bakers. You will play a key part in maintaining quality, consistency and efficiency across production.
The role requires a balance of technical baking expertise, leadership skills and operational awareness. You will receive full support and training, including the use of our bakery management software.
Working with mindfully sourced ingredients from small-scale producers, you will be expected to respect the produce, value sustainable food systems and minimise wastage. While this position does not include night shifts, a positive and proactive attitude towards early starts is essential.

Responsibilities Production and Quality
Conduct regular taste tests and quality checks of viennoiserie products.
Adjust recipes and processes to meet quality standards, optimising hydration levels, lamination and proofing times.
Establish and uphold quality control checkpoints throughout the production process.
Team Leadership and Training
Lead daily shifts and allocate tasks to ensure smooth production flow.
Provide hands-on training and support to team members in baking techniques and kitchen safety.
Offer constructive feedback and coaching to help staff improve their skills and confidence.
Operational Excellence
Maintain high standards of cleanliness, safety and organisation across the production area.
Conduct regular inspections of equipment and workstations.
Implement corrective actions when necessary to uphold quality and efficiency.
Inventory and Stock Management
Monitor stock levels of ingredients and packaging.
Communicate with the management team to ensure timely ordering and delivery of supplies.
Help implement efficient inventory management systems.
Sustainability
Work with responsibly sourced ingredients and promote sustainable practices.
Minimise wastage and support environmentally conscious production.
Requirements Minimum of one year in a leadership or supervisory role.
Strong organisational skills and the ability to prioritise tasks in a dynamic setting.
Excellent attention to detail and commitment to quality.
Good communication and interpersonal skills.
Basic knowledge of food safety standards and practices.
Positive attitude and ability to work both independently and collaboratively.
